Melt In Your Mouth Banana Citrus Muffins ~ Nutrition And Taste Galore

Like the French start their sentences with Alors! ...I start with so!


So, last week, I had some overripe bananas...I don't like eating them raw, they are far too sweet. For eating raw, I like bananas that have just turned yellow with a hint of green still in the skin. How do you like your bananas? Comment below... let's have a banana chat!


I don't like throwing food either, so, I decided to bake them...that's what I normally do when I have overripe bananas. But this time, I decided to zing it up! I have never tried with lemon before...I got excited about my new idea!


Had some oranges too in the kitchen, so I decided to throw that into the recipe as well...and OMG! am I pleased! This is my favourite banana recipe at the mo!


Here's what goes into them:


2 large ripe bananas

2 large eggs

1 cup ground almond

1 cup gluten-free oat flakes

1 tbsp raw cane sugar

1 tsp vanilla extract

2 tsp baking powder

1/4 cup Olive oil 60 ml

Zest of 1 large lemon

Juice of half a large lemon

Zest of 1 large orange

Walnuts - soaked overnight

(note: nuts are much easier for

digestion when soaked)

Cinnamon powder

Pinch of sea salt


and....

5 cups of love...the most important ingredient!


Makes: 6 muffins Preparation time: 20 mins Bake Time: 25 mins


Here's how to do it:


Chop the walnuts into fine pieces and keep them aside for topping.


Add ground almonds and oats to a mixing bowl. Throw in the vanilla, sugar, cinnamon, baking powder, sea salt, olive oil, baking powder and mix them. Beat the eggs separately and add to the mix.


In a separate bowl, mash the bananas, squeeze the lemon juice in, add all the lemon zest and some orange zest. Save some orange zest for topping. I particularly love the burnt orange taste...yummm...OK...back to the recipe!


Gently fold them into the rest of the ingredients.


Get your muffin molds out, line them with some oil, drop the mix in.


💡 Don't forget to top them with your chopped walnuts and orange zest.

Preheat oven to 180 degrees.


Bake for 25 mins (while you scroll on social media...lol!) and voilà! your super scrumptious, melt in your mouth, citrusy banana muffins are ready to serve!
